Before the first dish was plated, the chefs of Savant set out on a journey across Serbia. Through villages, mountain roads, local markets and family-run wineries, they sought not only the finest ingredients, but something far more elusive-dentity. What they found was a palette of authentic flavors and time-honored techniques that now serve as the foundation of a globally minded, locally inspired cuisine.
The menu is seasonal, with ingredients like wild Serbian truffles, forest mushrooms, and free-range mangulica pork anchoring its bold compositions. Each dish is a modern interpretation grounded in memory and provenance. Signature plates include lamb burek, mangulica chop, spiced duck, and sea sole Meunière. Even the desserts, tiramisu included, echo this fusion of heritage and contemporary style.
Savant's wine list, curated by the St. Regis Cellar Master, focuses on the new wave of Serbian winemakers while integrating selected international classics. Wines are chosen for their sense of place and modern spirit. House cocktails, like the Krug Dvojke, named after Belgrade's legendary tram line, translate the city's streets into flavor, color, and scent.
